Kale Focaccia Rolls
Makes 5 large rolls
This recipe is a great way of packing more flavour and goodness into your bread. Kale can sometimes be hard to eat on its own, but it’s so good for you! So, in this recipe it’s all about feeling good about eating good- with something that tastes good!
To make this recipe you need:
1 pack of our gluten free Focaccia mix
80g (approx) of steamed and blitzed Kale
30g olive oil (plus extra for shaping)
300g (approx) of warm water
*It’s important to steam the kale first because raw kale doesn’t mix into the dough as well and doesn’t taste as good once the bread is baked.
Empty the contents of the packet into a medium sized bowl. Stir in the yeast sachet that comes with the Focaccia mix.
Add the oil and gradually the warm water. This dough should be sticky but not runny.
Add the steamed and blitzed kale, mix well so that it’s distributed evenly throughout the dough.
Divide the dough into 5 equal sized portions. Rub some oil on your hands and gently shape the dough into a ball.
Place the dough ball onto a baking sheet and press flat slightly. Repeat with the remaining portions.
Leave to rise in a warm place for about 45 minutes to 1 hour.
Bake in a preheated oven at 190°C for 25 minutes until golden and the rolls lift easily off the tray.
These are delicious served warm with a hearty soup or filled with your favourite deli items.
