Gluten Free Pulled Pork Focaccia Sliders
Recipe makes approximately 13 sliders
One of the many reasons I love our gluten free focaccia mix is that it is so versatile. As well as being dairy free, wheat free, soya free and egg free!
To make the sliders I used one bag of Focaccia mix. Following the recipe to make the dough, I then used a standard sized ice-cream scoop to divide the dough into equal sized portions.
Rubbing a little oil on my hands I then shaped the dough into smooth round balls. The oil helps prevent the dough from sticking to your hands and also gives the bread a lovely dark golden colour when it's baked.
To make the pulled pork filling, I used two pork loin steaks and braised them in beef stock with a 1/2 teaspoon of freshly ground black pepper and a minced garlic clove for about 2-3 hours until tender and the pork shreds easily. I then added about 2 tablespoons of apple puree to the hot shredded pork. This combination is delicious on its own but I decided to splash out and put some caramelised red onion marmalade onto the sliders topped with the pulled pork.
These sliders are perfect for dinner with a leafy salad and potato wedges. They also work great for parties as you can substitute the pulled pork for a variety of different fillings like mini chicken fillet burgers, mini veggie burgers, grilled goats cheese with rocket and mango chutney....the list is endless!
