This recipe is perfect for you mince pie lovers, without the tricky pastry!
You will need
1 pack of our gluten free Scone mix
1 jar of your favourite sweet mince
2 tbsp of soft light brown sugar
Follow the instructions on the packet to make the dough, adding 30g of vegetable oil and 280g approx of buttermilk.
Roll the dough out into a long rectangle about 5 cm by 30cm. Spread over the sweet mince filling and sprinkle over the soft light brown sugar.
Gently and carefully roll the dough length ways to form a log. Slice into 2cm slices, you should get about 16 scones.
Place onto a baking tray, bake at 170 degrees celsius for 20 minutes.
Serve warm with vanilla ice cream, absolutely delicious!
